Sacha Inchi oil (Plukenetía Volubilis L) obtained by cold pressing, presented physicochemical characteristics considered of great importance for human consumption. This oil comes from a non-traditional plant that is grown in Ecuador in the coastal region in the provinces of Los Ríos, Guayas, Esmeraldas, Santo Domingo de los Tsachilas and Manabí in soils with altitudes between 200 and 1500 meters above sea level. The Sacha Inchi almond oil analyzed considering the storage period of 2 to 6 months presented the peroxide index of 4.56 meq O2 / kg, 0.37% free fatty acids, 0.033% moisture, additional the lipid profile as Ac.Alfa Linolenico C18:3 n3; Ac. Linoleic C18:2 with 81.25% polyunsaturated fat, the main characteristic of this oil is its high content of Omega 3. Alpha Linolenic acids C18:3 n3; highlighting the benefits in nutrition and the protective effects against cardiovascular diseases. This type of oil has high levels of omega 6 and omega 9 that are maintained by cold pressing. A statistical analysis was carried out with which the excellent properties of cold-pressed sacha inchi oil were verified.
